
A friend of mine was challenged by time, exhaustion, bad habits, and temptation and simply wanted to eat healthier. She was experiencing some major health issues including diabetes and reduced kidney functioning. She enjoyed cooking for herself on her days off but was tiring of the same old thing. She was too often stopping for fast food or take out at lunch and on her way home from work. She knew I maintained a relatively healthy and nutritious lifestyle and asked me if I would be willing to help her out.
I told her I was not a chef or professional nutritionist and she said, “Well you know more than I do.” We’ve been getting together every week and discovering new and exciting ways to satisfy her particular food preferences while staying faithful to nutritious meal plans.
Our first week I made roasted veggies. She loved the savory variety of orange, red, yellow and green vegetables. They became a great snack and for dinner were perfect with a piece of fish or a chicken breast.
One cook day we made a Bolognese sauce using healthy alternatives to beef and sausage. We very bravely decided to substitute spaghetti squash and black bean spaghetti for regular pasta. We were a little concerned she’d have to up her insulin for this one. The next day she told me she should have lowered her insulin.
These are only a couple of the dishes I regularly prepare and each week we find another tasty way to choose nutritious foods over quick and easy take out and fast foods.
Her kidney doctor is thrilled over her improved test results. She’s been able to lower her insulin intake. She’s lost 15 pounds. She is over the moon at having someone else brave the grocery store lines and parking lots.
She tells me I have absolutely Spoiled Her Fresh!
